Ingredients

  • 1 onion, chopped

  • 600ml vegetable stock

  • 1 butternut squash, peeled, deseeded and diced

  • 1 stick celery, chopped

  • 4 tbsp sherry, (optional, makes it nicer for the grownups)

Method

  1. Fry the onion and celery for a few minutes until soft.
  2. Throw in butternut squash, stock and sherry if using.
  3. Simmer for 20 minutes.
  4. Blend to a pulp.

Handy Hint

Makes a lovely soup for adults (take a ladleful of liquid out when blending, remove baby portion then add liquid back in)
