Moroccan (sort of) chicken

Ingredients

  • 1-2 tbsp olive oil

  • 300ml chicken or vegetable stock

  • 1 large red onion

  • 2 tsp harissa paste

  • 2 handfuls fresh spinach leaves washed

  • 3-4 cloves garlic (to taste)

  • 1 pinch fresh coriander

  • 2-3 medium chicken breasts chopped

  • 3 tbsp pine kernels

  • 12 mushrooms washed or peeled, and chopped

  • 1 tsp lemon juice

  • 10 fresh or dried dates finely chopped (or a handful of sultanas)

Method

  1. Fry the chopped onion and garlic in a large pan in olive oil until softened.
  2. Add chicken pieces and fry, turning regularly, until meat whitened on all sides.
  3. Then add mushrooms and soften for 2-3 mins.
  4. Finally, add dates/sultanas, pine kernels, harissa paste, squeeze of lemon juice, coriander and stock and simmer for another 20 mins or so until liquid reduced.
  5. Add spinach for a final 1-2 mins of cooking. Serve with rice, flat bread, green veg, as desired…and a glass of dry white wine.
