Orecchiette with broccoli and anchovy sauce

Ingredients

  • 6 anchovies, chopped

  • 500g broccoli

  • 400g orecchiette pasta

  • 1 handful Parmesan

  • 1-2 red chillies, chopped

  • 1 handful breadcrumbs

Method

  1. Toast the breadcrumbs in hot oven until golden and crispy.
  2. Cut the broccoli into florets and cook in lightly salted water until just tender/crisp. Set aside.
  3. Bring the same water to boil and cook the pasta.
  4. In a frying pan, warm the olive oil, add the anchovies and work into a paste with a wooden spoon, then turn up heat, add chillies and broccoli.
  5. Cook for few minutes, then add the cooked orecchiette and the toasted breadcrumbs.
  6. Season with black pepper and serve with grated Parmesan.

    This is oneof our favourite pasta dishes - great for the family and a good way to get kids to eat brocoli. We don't tend to use chilli with it for our little one - but I might give it a shot now! Quick, simple and very yummy!

    Only vegetarian if anchovies are acceptable and vegetarian cheese used.
