Orecchiette with broccoli and anchovy sauce

  • 6 anchovies chopped

  • 500g broccoli

  • 400g orecchiette pasta

  • 1 handful Parmesan

  • 1-2 red chillies chopped

  • 1 handful breadcrumbs


<ol> <li>Toast the breadcrumbs in hot oven until golden and crispy.</li> <li>Cut the broccoli into florets and cook in lightly salted water until just tender/crisp. Set aside.</li> <li>Bring the same water to boil and cook the pasta.</li> <li>In a frying pan, warm the olive oil, add the anchovies and work into a paste with a wooden spoon, then turn up heat, add chillies and broccoli.</li> <li>Cook for few minutes, then add the cooked orecchiette and the toasted breadcrumbs.</li> <li>Season with black pepper and serve with grated Parmesan.</li> </ol>

    This is oneof our favourite pasta dishes - great for the family and a good way to get kids to eat brocoli. We don&#39;t tend to use chilli with it for our little one - but I might give it a shot now! Quick, simple and very yummy!

    Only vegetarian if anchovies are acceptable and vegetarian cheese used.
