Ingredients

  • 1 medium onion

  • 1/2 tomato puree

  • 1 pinch salt

  • 1 tbsp vegetable oil

  • 1/2 tins chopped tomato

  • 1 green pepper

  • 1 chilli eg dried red chilli, chopped green chilli, chilli powder (optional)

  • 1 red pepper

  • 500g minced beef (or lamb if you prefer)

  • 1 clove garlic

  • 1 handful frozen sweetcorn

  • 1 handful mushrooms

Method

  1. Thrown the onions, garlic and chillies into a large pan with the vegetable oil and fry until the onions are clear.
  2. Add the salt and fry for 1 more minute.
  3. Add the minced beef/lamb and chopped tomatoes and cook for 10 minutes stirring well. Cover and cook on a low heat for 1 hour stirring occasionally.
  4. Add red and green peppars and cook for 10 minutes. Add red kidney beans, mushrooms and sweetcorn and cook for half an hour.
  5. Add tomato puree and cook for final 5 minutes.
