Ingredients

  • 100g self-raising flour

  • 100g caster sugar

  • 5ml vanilla essence

  • 2 eggs

  • 100g soya margarine

  • 15ml hot water

  • 1 lemon rind, grated

  • 50g sultanas

  • 1 banana

Method

  1. Preheat the oven to 180C/Gas Mark 4.
  2. Beat together margarine, sugar and vanilla.
  3. Beat in eggs a bit at a time with some of the flour.
  4. Stir in remaining flour, hot water, raisins and lemon rind.
  5. Mash the banana into the mix, squishing into as small lumps as you can be bothered with.
  6. Drop into mini paper cases (mini things always taste nicer!) on a baking tray, ensuring at least one lump of banana goes in each one.
  7. Bake for 15 minutes and cool on a wire rack.

Handy Hint

No icing required as the banana keeps them moist.

    Yup. Eggs certainly not dairy. If they said "Vegan" that would be wrong.

    these are not dairy free as have 2 eggs in the ingredients !!
