Ingredients

  • 1 onion, sliced

  • 2 tsp tomato puree

  • 6 potato, peeled and chopped

  • 900ml stock, (ideally lamb stock)

  • 1kg stewing lamb

  • 3 carrot, chopped

  • 2 tsp Worcestershire sauce

Method

  1. Brown the lamb in batches in a thick bottomed casserole pot and remove.
  2. Fry the onion and carrots for 5 minutes.
  3. Put the lamb back in and then add the potatoes, stock, Worcestershire sauce and puree. Season to taste.
  4. Put in oven for around 2-2.5 hours at 160C/Gas Mark 3.
