Ingredients

  • 1 tbsp peanut butter, crunchy works better

  • 1 tbsp sweet chilli sauce, or more to taste

  • 1 handful cashew nuts, whole or lightly broken up

  • 1 white cabbage, shredded

  • 1 carrot, shredded or finely sliced

Method

  1. Gently warm the peanut butter in a frying pan until it starts to melt.
  2. Add the carrot and cabbage and cook for just a few minutes, stirring constantly to fully coat.
  3. Turn off the heat.
  4. Add the sweet chilli sauce and stir well.
  5. Sprinkle the cashews on top and serve.
