Ingredients

  • 115ml chicken stock

  • 1 tbsp capers

  • 1 bay leaves

  • 4 strips of lemon zest

  • 3 cloves garlic

  • 345ml Worcestershire sauce

  • 1 chicken thigh (2/adult)

  • 4 sprigs thyme

Method

<ol> <li>Brown chicken, remove and keep warm. Drain off most of fat.</li> <li>Add garlic (peeled not chopped) for few minutes. Add wine and boil for few minutes until reduced by about half.</li> <li>Add other ingredients - put chicken back in - transfer to oven for 45 minutes.</li> </ol>

Handy Hint

<p>Sauvignon wine is particularly good or Pinot Grigio as alternative.</p>
