Ingredients

  • 115ml chicken stock

  • 1 tbsp capers

  • 1 bay leaves

  • 4 strips of lemon zest

  • 3 cloves garlic

  • 345ml Worcestershire sauce

  • 1 chicken thigh, (2/adult)

  • 4 sprigs thyme

Method

  1. Brown chicken, remove and keep warm. Drain off most of fat.
  2. Add garlic (peeled not chopped) for few minutes. Add wine and boil for few minutes until reduced by about half.
  3. Add other ingredients - put chicken back in - transfer to oven for 45 minutes.

Handy Hint

Sauvignon wine is particularly good or Pinot Grigio as alternative.
