Ingredients

  • 30g icing sugar, sifted

  • 140ml milk

  • 285ml double cream

  • 1/4 tsp cocoa powder

  • 1 tsp instant coffee

  • 2 tbsp sherry

  • 55g maraschino cherries

  • 110g marshmallows

  • 30g currants

  • 30g sultanas

  • 55g raisins

  • 55g nuts, chopped

Method

  1. Soak fruit in sherry for at least 30 minutes.
  2. Heat the milk, marshmallows, cocoa and instant coffee in a pan until marshmallows have melted.
  3. Add fruit to melted mixture.
  4. Freeze until mixture thickens.
  5. Add whipped cream, put into a serving basin and return to the freezer.
  6. Garnish with cherries and icing sugar before serving.

Can be made up to four or five days ahead.
