No-fail tomato sauce

  • 1 onion diced finely

  • 1 tbsp tomato puree

  • 2 tsp sugar

  • 1 splash wine

  • 1 clove garlic

  • 500g passata

  • 1 splash tabasco to taste)


<ol> <li>Sweat the onion slowly in oil until it softens (low heat), then add the tomato puree and garlic. <br />Stir around briefly.</li> <li>Add a splash of old wine if you have it to deglaze the pan, then add a carton of passata and some sugar to taste. I also add a drop of Tabasco.</li> <li>It will look pretty unexciting a this point but let it simmer slowly for 30 minutes or until it thickens and turns dark red and it goes very sweet and nice.</li> </ol>

Handy Hint

<p>Add anchovies and tuna or capers and parsley, or cheese for the kids.</p>
