Ingredients

  • 1 onion, finely chopped

  • 1 tbsp olive oil

  • 1 tbsp mayonnaise

  • 1/2 red pepper, chopped

  • 5 slices bacon

  • 1 pinch seasoning

  • 1 clove garlic, finely chopped

  • 300g pasta

  • 1 tin baked beans

  • 1 drop tabasco, (optional)

  • 5 mushrooms, sliced

Method

  1. Preheat oil in a large saucepan.
  2. Fry onions and garlic 5 mins add pepper and mushrooms fry for a further 3 mins.
  3. Stir in the can of beans, tabasco and seasoning to taste and turn the heat down low and simmer for a further 10-15 mins.
  4. Meanwhile cook pasta according to packet instructions and grill the bacon until crispy.
  5. Cut up the cooked bacon into small pieces and add to the bean mixture .
  6. Drain the cooked pasta and add to the bean mixture, then turn off the heat and add the mayonnaise stirring in thoroughly before serving the pasta dish.
