Ingredients

  • 3 tbsp olive oil

  • 3 tsp soft brown sugar

  • 2 chicken breast

  • 1 tsp freshly ground black pepper

  • 2 tsp ground ginger

  • 100ml soy sauce

  • 100ml pineapple juice

  • 16 cherry tomatoes

  • 16 button mushrooms

  • 1 tsp English mustard

  • 2 sweet peppers mixed colours

  • 300g fresh pineapple

Method

  1. Chop up chicken into cubes and put into a bowl.
  2. Mix pineapple juice, soy sauce, oil, sugar, garlic, ginger, mustard and pepper in a small saucepan.
  3. Bring to boil, then simmer for 5 mins.
  4. Pour marinade over chicken- cover and chill for 1 hour.
  5. Thread chicken on skewers with veg and grill for about 20 mins (turn and baste frequently with marinade).
