Ingredients

  • 225g self-raising flour

  • 1 pinch caster sugar, (for sprinkling)

  • 175g sugar

  • 1/2 tsp ground cinnamon, (optional)

  • 100g porridge oats, (you might be able to get Fairtrade but I am not sure)

  • 2 ripe bananas, mashed

  • 25g sultanas, (or dried fruit)

  • 175g butter, softened

Method

  1. Preheat oven to 200C (or wait until you are nearly ready to put in the oven if you have a fan oven).
  2. Cream the sugar and butter together.
  3. Cut in the flour, oats and cinnamon to make a crumbly mixture.
  4. Sprinkle half into a baking tray (12 by 8 inch) and press down lightly.
  5. Spread over the bananas and sprinkle the dried fruit.
  6. Sprinkle the rest of the mixture over and again press down lightly.
  7. Bake it for 25-30 minutes until golden. Sprinkle with caster sugar.
  8. Wait until it cools, then cut into chunks.
