1 salmon fillet (or use cod or another fish)
1 handful cornflakes crushed in a bag with a rolling pin, or in a food processor
1 handful plain flour (for dredging)
- Use suitable fish fillets eg salmon or cod. Double check for bones.
- Cut into bite size pieces for smaller kids, leave whole or cut in half lenth ways (like a fish finger) for older kids.
- Dip in flour, then dip in beaten egg, then coat with crushed cornflakes (crush in a bag with a rolling pin or in a food processor).
- Put on a baking tray and cook for 10 minutes. YUM!
Make double and freeze (either before or after cooking) for an easy quick after school dinner in the week.
have yet to meet a kid who doesn't like this. For the adults in the house, marinate the fish in shallots, lemon, olive oil and salt and pepper before dipping and coating to make “posh” fish fingers!
