Ingredients

  • 140g self-raising flour

  • 140g icing sugar

  • 1 tsp vanilla extract

  • 175g caster sugar

  • 100g white chocolate

  • 150ml plain yoghurt

  • 3 eggs (beaten)

  • 100g ground almonds

  • 175g butter (melted)

  • 140g butter (unmelted)

Method

  1. Line a 12 hole muffin case with paper cases. Mix the yoghurt up with the eggs and vanilla.
  2. Put the dry ingredients into a bowl, make a well in the centre and add the yoghurty mix and melted butter.
  3. Fold quickly and add to the muffin tin. Bake at 180 for 18-20 mins.
  4. Make the icing by mixing together the white chocolate, unmelted butter and icing sugar, then add when cake is cool.

Handy Hint

Melt the chocolate then beat in the butter and icing sugar. Can be chilled for up to a month. You can make these in advance and they keep in an airtight container.
