Ingredients

  • 1 onion

  • 1 potato peeled and chopped into cubes

  • 450ml chicken stock (or vegetable stock)

  • 400ml coconut milk

  • 1 chilli (optional)

  • 3 sweet potatoes peeled and chopped into cubes (large)

Method

<ol> <li>Peel and chop sweet potato and onion and sweat in a pan for 5-7 minutes until the onion is transparent.</li> <li>Add the chopped potato and enough stock to cover all veg and bring to boil.</li> <li>Boil until potatoes are cooked (keep an eye on the stock levels and add more if necessary - it doesn't need to stay above the level of the veg, there just has to be enough to ensure the pot doesn't boil dry).</li> <li>Once cooked, blitz the potatoes and onions, and add coconut milk to taste (I usually make a stock pot full and add a full can of coconut milk).</li> </ol>

Handy Hint

<p>This is quite sweet so kids absolutely love it. If you add chilli (I use the dried flakes) when you add the plain potato it just adds a bit of a kick that adults love. Makes a posh yet very easy starter if you're entertaining. To balance up the sweetness for adults just adjust the proportions of potatoes as necessary.</p> <p>This freezes really well so I usually make and batch it.</p>

    soup was lovely , i added a little cumin to mine ..2 year old loved it
