Desi lamb and fresh mint karai karai

  • 5 tbsp oil

  • 1 pinch salt

  • 1 large onion

  • 1 tsp turmeric

  • 4 tbsp natural yoghurt heaped

  • 2 tbsp ginger grated

  • 1 tbsp garam masala

  • 1 handful fresh mint chopped

  • 1 tsp cumin heaped

  • 1kg shoulder of lamb cubed on the bone

  • 1 tbsp mild paprika

  • 1 tbsp garlic crushed

  • 1 tsp chilli flakes or powder

  • 1 tbsp coriander

  • 4 fresh tomatoes cubed


<ol> <li>Add oil and onions to a pan, cook until slightly golden.</li> <li>Add the meat and cook for 5 minutes, then add ginger, garlic, salt and all the other spices.</li> <li>Cook for a minute then add the yogurt and tomatoes and a splash of water. Mix well, cover with a lid and cook on slow for 1 hour then garnish with chopped mint.</li> </ol>

Handy Hint

<p>Add vinegar to tenderise the meat.</p>

    This dish can be eaten with rice, chapatis, naan bread, even great with chips
