Ingredients

  • 1 tsp olive oil

  • 1 pinch salt, (to taste)

  • 1 tomato, chopped

  • 1 chilli, deseeded and finely chopped

  • 1 handful cheese, grated

  • 4-6 eggs, (depending on how hungry you are)

  • 2 spring onions, chopped

Method

  1. Beat the eggs and add salt.
  2. Fry the spring onions and chilli in the oil for a couple of minutes. Add the eggs and the chopped tomato and scramble. Add the cheese when the eggs are nearly done.

Handy Hint

The quantities I started with were for 2 people, 4 eggs. If you want to make more, up the number of tomatoes, spring onions and chilli (if you like it hot).
