  • 1 tsp olive oil

  • 1 pinch salt (to taste)

  • 1 tomato chopped

  • 1 chilli deseeded and finely chopped

  • 1 handful cheese grated

  • 4-6 eggs (depending on how hungry you are)

  • 2 spring onions chopped


<ol> <li>Beat the eggs and add salt.</li> <li>Fry the spring onions and chilli in the oil for a couple of minutes. Add the eggs and the chopped tomato and scramble. Add the cheese when the eggs are nearly done.</li> </ol>

Handy Hint

<p>The quantities I started with were for 2 people, 4 eggs. If you want to make more, up the number of tomatoes, spring onions and chilli (if you like it hot).</p>
