Ingredients

  • 2 tbsp tomato puree

  • 2 tsp ground cinnamon

  • 1 tsp turmeric

  • 1 tsp ground ginger

  • 200ml stock, (or enough to cover. Can use white wine.)

  • 1 leek

  • 1 tsp ground cumin

  • 1 handful fresh coriander, (to garnish)

  • 60g dried apricots

  • 1 tsp coriander seeds

  • 1 handful parboiled potatoes, cubed

  • 4 chicken breasts

Method

  1. Fry the chicken in olive oil for a couple of minutes until it is brown on all sides.
  2. Chop and add the leeks and fry for a couple of minutes.
  3. Add all other ingredients and place in slow cooker.
  4. Cook on high/medium setting depending on how long you will be leaving the dish in the slow cooker - 4 hours on high, but 6 hours on medium. The chicken will be very tender.

Handy Hint

Can add par-boiled carrots or other veg to the slow cooker.
can replace the apricots with prunes.
Can also be placed in a casserole dish and cooked in an oven if you don't have a slow cooker.

    This has a lovely spice to the dish without being hot so suitable for children and adults.
