Ingredients

  • 1 onion

  • 1 tin chopped tomato (or use passata)

  • 1 pinch ginger (optional)

  • 1 green pepper

  • 1 courgette

  • 1 handful sweetcorn

  • 2 handfuls cheese grated

  • 1 pinch paprika (optional)

  • 1 pinch garlic (optional)

  • 8 flour tortillas

  • 1 packet of Quorn pieces or tofu or chickpeas

  • 1 pinch dried cumin (optional)

  • 1 handful mushrooms

  • 1 tsp lemon juice (optional)

Method

<ol> <li>Chop and stir fry the vegetables, plus the Quorn/tofu/chickpeas.</li> <li>Add the spices and stir to coat the vegetables.</li> <li>Add the chopped tinned tomato or passata, plus lemon juice.</li> <li>Heat tortillas (1 minute in microwave, or under grill).</li> <li>To finish either roll filling inside tortilla including the grated cheese or, to make enchiladas, roll the filling inside tortillas and place these in a baking tray.</li> <li>Grate cheese on top and put under grill or in oven for 5 minutes.</li> </ol>

Handy Hint

<p>You can vary this almost endlessly - include different vegetables, yoghurt or cottage cheese. Or without dairy at all.</p>

    Quick, easy, always popular with my children and visiting children. Can be made spicy for adults and bland for fussy children.
