Ingredients

  • 1 onion

  • 1 tin chopped tomato, (or use passata)

  • 1 pinch ginger, (optional)

  • 1 green pepper

  • 1 courgette

  • 1 handful sweetcorn

  • 2 handfuls cheese, grated

  • 1 pinch paprika, (optional)

  • 1 pinch garlic, (optional)

  • 8 flour tortillas

  • 1 packet of Quorn pieces or tofu or chickpeas

  • 1 pinch dried cumin, (optional)

  • 1 handful mushrooms

  • 1 tsp lemon juice, (optional)

Method

  1. Chop and stir fry the vegetables, plus the Quorn/tofu/chickpeas.
  2. Add the spices and stir to coat the vegetables.
  3. Add the chopped tinned tomato or passata, plus lemon juice.
  4. Heat tortillas (1 minute in microwave, or under grill).
  5. To finish either roll filling inside tortilla including the grated cheese or, to make enchiladas, roll the filling inside tortillas and place these in a baking tray.
  6. Grate cheese on top and put under grill or in oven for 5 minutes.

Handy Hint

You can vary this almost endlessly - include different vegetables, yoghurt or cottage cheese. Or without dairy at all.

    Quick, easy, always popular with my children and visiting children. Can be made spicy for adults and bland for fussy children.
