Chicken and cashews

Ingredients

  • 1 yellow pepper

  • 3 chicken breast skinless and boneless

  • 1 red pepper

  • 1 tbsp sesame oil

  • 1 tsp soy sauce (to taste)

  • 1 1/2 lemons juiced

  • 3 cloves garlic

  • 1 orange pepper

  • 1 piece of ginger (about the size of a thumb)

  • 1 bag salted cashews

Method

  1. Chop the chicken into bite sized pieces.
  2. Heat about a tablespoon of sesame oil in a wok,
  3. Grate the ginger and crush the garlic into it.
  4. Brown the chicken, then add the peppers (chopped).
  5. Stir fry for about 4 or 5 minutes, then add the lemon juice and some soy sauce to taste.
  6. Fry for a further minute, remove from heat and stir in the cashews. Serve with rice.

    Incredibly easy, very adaptable. No idea if it's freezable as there's never any left - it's dd & ds's favourite meal.
