Spinach and feta samosas

Ingredients

  • 2 handfuls spinach, chopped

  • 1/2 lemon, juiced

  • 1/2 handfuls mint, chopped

  • 4 spring onions, finely sliced

  • 1 packet of filo pastry sheets

  • 2 handfuls flat-leaf parsley, chopped

  • 1 block feta, cubed

Method

  1. Mix all the greens, onion and feta together in a bowl and add the juice from half a freshly squeezed lemon.
  2. Add salt and pepper to season.
  3. Lay filo sheets out flat one at a time. Place 1 tbsp of the mixture. fold pastry in triangles down the length folding in the sides. Brush with olive oil to seal and add shine.
  4. Oven bake for 15 minutes at 200C/Gas Mark 6 or until crispy. Serve hot or cold.
