Spinach and feta samosas

  • 2 handfuls spinach chopped

  • 1/2 lemon juiced

  • 1/2 handfuls mint chopped

  • 4 spring onions finely sliced

  • 1 packet of filo pastry sheets

  • 2 handfuls flat-leaf parsley chopped

  • 1 block feta cubed


<ol> <li>Mix all the greens, onion and feta together in a bowl and add the juice from half a freshly squeezed lemon.</li> <li>Add salt and pepper to season.</li> <li>Lay filo sheets out flat one at a time. Place 1 tbsp of the mixture. fold pastry in triangles down the length folding in the sides. Brush with olive oil to seal and add shine.</li> <li>Oven bake for 15 minutes at 200C/Gas Mark 6 or until crispy. Serve hot or cold.</li> </ol>
