Ingredients

  • 1 pinch salt and pepper (to taste)

  • 1 onion peeled and chopped

  • 2 tbsp olive oil

  • 1 handful fresh parsley

  • 2 cloves garlic peeled and chopped

  • 2 handfuls small pasta shells

  • 2 tuna steaks

  • 4 tomatoes

Method

  1. Fry onion and garlic in olive oil.
  2. Peel tomatoes by blanching them in boiling water, chop and add to onion.
  3. Add fresh parsley to tomato/onion mixture.
  4. Use hand blender to puree mixture.
  5. Cut tuna into strips and add to puree.
  6. Add about 2 litres of boiling water plus salt/pepper to taste.
  7. Add pasta.
  8. Serve when ready.

    Lovely, easy recipe handed down from my grandma. You can make it in advance but do not add pasta until ready to serve
