  • 1 handful cheddar

  • 1 green chilli finely chopped

  • 8 large tomatoes

  • 1 clove garlic crushed

  • 1 handful fresh coriander

  • 2 oranges

  • 300g tagliatelle (or any large flat pasta)

  • 6 spring onions sliced


<ol> <li>Skin and roughly chop the tomatoes.</li> <li>Stir fry the garlic, onions and chilli for around one minute.</li> <li>Add the tomatoes and the juice of two oranges and reduce, stirring until it becomes a semi-smooth sauce. Meanwhile cook the pasta.</li> <li>Add the pasta to the pan and stir through.</li> <li>Season and top with the cheese and coriander when serving.</li> </ol>

Handy Hint

<p>To make skinning the tomatoes easier I put them in a colander over the boiling pasta pot to steam and soften them slightly. If you are short on time it works fine to not bother skinning them at all.</p>

    A really yummy fresh tasting pasta dish, also great to use up tomatoes past their best.
