Ingredients

  • 1/2 tsp olive oil

  • 500g plain yoghurt

  • 1 handful fresh mint, washed and finely chopped

  • 1 pinch seasoning, (to taste)

  • 1 clove garlic, chopped and pressed

  • 1 tsp lemon juice

  • 1 small cucumber, washed and chopped small

Method

  1. Mix together cucumber, mint and garlic.
  2. Add a squeeze of lemon, olive oil and plain yoghurt - test and season.

Handy Hint

Kids love this with flat breads or toast.
