150 g sweetcorn, drained and washed
4 slices ham, or turkey. Sliced into 1 inch strips
1 eggs, beaten
1 roll of puff pastry, (or flaky if preferred)
120 g Gouda, or similar cheese. Grated
- Mix cheese, ham and sweetcorn together in a bowl with a beaten egg.
- Cut out circles from your pastry sheet. I used a water glass or mug because my biscuit cutters were too small. Small pies look cuter but take ages.
- Then, with a spoon, place a blob of mixture in the centre of a pastry circle and then top it with another circle. Press round the edges to give a 'pie crust' effect and then snip a 'V' shape into the top with scissors. You should get nine or 10 depending on your cutter size.
- Stick them all in the oven at 200C or whatever your pastry recommends. Just keep checking them timewise as small things seem to brown faster and you don't want to end up with black pies. Et voila! Cute mini-pies!
If you use a smaller cutter it will take longer but will look cuter and more like a canape.
