Ingredients

  • 175g self-raising flour sifted

  • 275g icing sugar

  • 1 tsp vanilla extract

  • 250g cream cheese

  • 1 tsp cinnamon

  • 1/2 tsp mixed spice

  • 1/2 tsp nutmeg

  • 140ml sunflower oil

  • 1/2 tsp bicarbonate of soda

  • 100g raisins

  • 75g walnuts chopped

  • 50g butter soft

  • 1 orange zested

  • 1 pinch salt

  • 2 eggs organic

  • 250g carrots organic

Method

<ol> <li>Preheat oven to 150C. Line a 2lb loaf tin.</li> <li>Whisk light brown sugar and sunflower oil until light and fluffy.</li> <li>Fold in remaining cake ingredients.</li> <li>Bake for 60-75 minutes.</li> <li>When cool add topping.</li> <li>Whisk cream cheese and butter until soft and fluffy.</li> <li>Add vanilla and orange zest and mix.</li> <li>Whisk icing sugar into mixture, bit by bit until stiff and sweet.</li> <li>Decorate cake with topping.</li> </ol>

Handy Hint

<p>Fold in ingredients in a figure of 8 to introduce air; do not beat.</p>
