Ingredients

  • 175g self-raising flour, sifted

  • 275g icing sugar

  • 1 tsp vanilla extract

  • 250g cream cheese

  • 1 tsp cinnamon

  • 1/2 tsp mixed spice

  • 1/2 tsp nutmeg

  • 140ml sunflower oil

  • 1/2 tsp bicarbonate of soda

  • 100g raisins

  • 75g walnuts, chopped

  • 50g butter, soft

  • 1 orange, zested

  • 1 pinch salt

  • 2 eggs, organic

  • 250g carrots, organic

Method

  1. Preheat oven to 150C. Line a 2lb loaf tin.
  2. Whisk light brown sugar and sunflower oil until light and fluffy.
  3. Fold in remaining cake ingredients.
  4. Bake for 60-75 minutes.
  5. When cool add topping.
  6. Whisk cream cheese and butter until soft and fluffy.
  7. Add vanilla and orange zest and mix.
  8. Whisk icing sugar into mixture, bit by bit until stiff and sweet.
  9. Decorate cake with topping.

Handy Hint

Fold in ingredients in a figure of 8 to introduce air; do not beat.
