Cabbage and carrot soup

Ingredients

  • 1 onion, chopped

  • 1 tsp smoked paprika

  • 1l stock

  • 1 tsp ground coriander

  • 1 pinch cumin seeds

  • 2 cloves garlic, crushed

  • 1 carrot, chopped

  • 1 cabbage, shredded

  • 1 tbsp yoghurt, low-fat

Method

  1. Fry the onion and garlic in Fry Light.
  2. Add cabbage and carrot, coriander and cumin seeds.
  3. Add stock and simmer for 20 mins. Add more water if necessary.
  4. Blitz with liquidiser.
  5. Add low fat yoghurt to soup before serving.
  6. Grind pepper over the top and add a couple of strips of shredded cabbage to garnish.

    I made it using dark green cabbage and so the colour was quite strange. Tasted OK though.

    Lovely, the coriander, cumin and smoked paprika give it an eastern flavour. Really tasty! Make a batch and freeze it!
