Creamy hidden vegetable pasta

Ingredients

  • 1 small pepper de-seeded and chopped

  • 1 tbsp olive oil

  • 1 handful cheddar grated

  • 1 tin chopped tomato (or passata)

  • 1 small carrot chopped

  • 150g pasta

  • 1 tsp Italian dried herbs

  • 1 small onion chopped

  • 1 handful mushrooms

Method

<ol> <li>Fry the onion in the oil until soft.</li> <li>Add the rest of the vegetables and cook for five minutes.</li> <li>Put the tomatoes, sugar and seasoning into a pan and heat while stirring for 10 minutes.</li> <li>Meanwhile, cook the pasta according to the instructions on the packet.</li> <li>Melt the cheese into the sauce.</li> <li>Blend with a hand blender until smooth, then mix with the pasta and serve.</li> </ol>

Handy Hint

<p>The pepper sweetens the sauce but if you don't use it, add a teaspoon of sugar to take away the sharpness of the tomatoes.</p>

    This is a great way of hiding veg for kids. My 4 year old struggles to eat it without the cheese though. It can be eaten by the entire family, grown-ups can take their serving out of the pot before the rest is blended. Great way of getting a dairy serving into non-milk drinking kids too.
