Ingredients

  • 1 tin tomato

  • 1 handful chicken, if not vegetarian, or whatever you have left over

  • 1 handful pepper, or any other leftover vegetables - tomatoes, onion, sweetcorn, rocket

  • 6 tortilla wraps

  • 1 clove garlic, crushed, to taste

  • 1 tsp herbs, whatever you like, to taste

Method

  1. Pre-heat oven to 180 degrees.
  2. Tip tinned tomatoes into a small open pan over a low heat with most of the other ingredients (rocket for instance needs to be added when cooked).
  3. Stir occasionally until a nice thickish texture. Grate cheese and prepare any other toppings eg: eggs, basil leaves, veg to make a face etc. Meat may need additional preparation.
  4. Lay tortillas on baking trays (two per pizza) and brush with the oil. Use spoon to thinly spread the pizza sauce onto the tortillas, immediately top with cheese etc and put into hot oven for 10-20 minutes.

Handy Hint

To get a crispy base: use a seed oil, ensure minimum time between putting on sauce and putting pizza in oven, leave to cool on baking tray before serving. Delicious served with wedges and salad. Sauce can be prepared and frozen in advance.
Can be used as tasty dippers if only a thin layer of topping applied.

    Seriously tasty, easy and very cheap! This is one people tend to request when visiting, it suits those evenings when everyone stays up late talking, drinking wine, steadily eating, as the pan of sauce can be kept simmering (makes the house smell delicious) and more and more pizzas put in the oven as the night progresses.
