Lemon and courgette soup

Ingredients

  • 1 onion chopped

  • 2 tbsp olive oil

  • 800ml vegetable stock

  • 900g courgette chopped

  • 1 unwaxed lemons zested and juiced

  • 25g butter

Method

<ol> <li>Heat oil and butter in a large saucepan. Add the garlic, onion and courgettes and saute for 10 minutes on a medium heat, without browning.</li> <li>Add stock and seasoning and bring to the boil, then turn down the heat and simmer for 10 minutes.</li> <li>Blitz with a hand held blender until smooth.</li> <li>Add lemon juice and zest and stir through.</li> </ol>

Handy Hint

<p>I tend to double the ingredients and then freeze. <br />It's delicious, low fat and really filling.</p>
