Corned beef hash

Ingredients

  • 1 handful cheddar grated (optional)

  • 1 200g tin of corned beef diced

  • 1 clove garlic finely chopped

  • 2 handfuls savoy cabbage shredded or broccoli, finely sliced

  • 1 large shallot finely chopped

  • 1 tbsp Worcestershire sauce

  • 1 handful mushrooms sliced

Method

  1. Gently fry the shallot and garlic in butter and/or oil in a large pan.
  2. Add the corned beef and a dash of Worcestershire sauce.
  3. Cook on a medium heat for 5 minutes or so.
  4. Meanwhile, steam the shredded cabbage or broccoli. Add the mushrooms and cook for a further couple of minutes.
  5. Add vegetables to the corned beef.
  6. Serve with a sprinkle of cheddar if you like!
