Ingredients

  • 1 vegetable stock cube

  • 1 onion

  • 1 tsp cinnamon

  • 1 parsley

  • 1 courgette

  • 1 lemon

  • 1 tbsp honey

  • 1 tsp cumin

  • 1 tin chickpeas

  • 4 chicken thigh

Method

  1. Fry the onion until soft.
  2. Brown the chicken.
  3. Add a tsp of both cumin and cinnamon.
  4. Add some stock to cover and simmer for half an hour.
  5. Add a tin of chickpeas, courgettes cut into matchsticks, and a tbsp of honey. Cook until courgettes are soft.
  6. Serve with couscous (if you're not following a gluten-free diet), parsley and lemon juice.
