  • 1 onion thinly sliced

  • 2 tbsp tomato puree

  • 2 tsp vegetable oil

  • 1/2 pints vegetable stock

  • 1 red pepper sliced

  • 3/4 tsp ground cumin

  • 1 tin beans (optional)

  • 3 cloves garlic crushed

  • 3/4 tsp chilli powder

  • 2 handfuls mushrooms thinly sliced


<ol> <li>Heat oil in a non-stick pan and fry onion, red pepper and garlic over a medium heat. Cook for 4 minutes, stirring frequently.</li> <li>Add mushrooms, cumin and chilli powder, continue to cook, stirring frequently, for 2 minutes. Add stock, puree and beans if using. Cook until thick and bubbly.</li> <li>Use in warmed fajitas or as potato topping, sprinkle on grated cheese for extra protein</li> </ol>

    Use less chilli if you dont like it too hot. Can pad out meal with lettuce, guacamole, salsa or add cooked meats for the non veggies.
