Beef casserole with dumplings in slow cooker recipe

Ingredients

  • 1 pinch salt and pepper

  • 1 onion, diced

  • 1/2 tsp baking powder

  • 1 potato, cubed

  • 1 green pepper, cut into chunks

  • 1 red pepper, cut into chunks

  • 400-500g stewing beef, cubed

  • 3 large carrots, peeled and chopped

  • 1-2 cloves garlic, peeled and sliced

  • 100g plain flour

  • 50g suet

  • 800-850ml beef or vegetable stock

  • 4 tbsp water

Method

For the beef casserole:

  1. Set your slow cooker to high.
  2. Add 500ml or so of your stock.
  3. Put the potatoes in first, followed by all other veg.
  4. Cut the beef into cubes and place in last.
  5. Top up with stock until just covering meat. Cook for 4-6 hours, adding dumplings 45 minutes before the end.

For the dumplings:

  1. Mix together suet, flour, baking powder and salt.
  2. Add 4-5 tablespoons of cold water and mix until soft and slightly sticky.
  3. Roll into balls about size of walnuts.
  4. Add to slow cooker about 45 minutes before the end.

Handy Hint

Use hands to mix dumplings.
Don't worry about sealing the meat first.
