Beef casserole with dumplings in slow cooker recipe

  • 1 pinch salt and pepper

  • 1 onion diced

  • 1/2 tsp baking powder

  • 1 potato cubed

  • 1 green pepper cut into chunks

  • 1 red pepper cut into chunks

  • 400-500g stewing beef cubed

  • 3 large carrots peeled and chopped

  • 1-2 cloves garlic peeled and sliced

  • 100g plain flour

  • 50g suet

  • 800-850ml beef or vegetable stock

  • 4 tbsp water


<p>For the beef casserole:</p> <ol> <li>Set your slow cooker to high.</li> <li>Add 500ml or so of your stock.</li> <li>Put the potatoes in first, followed by all other veg.</li> <li>Cut the beef into cubes and place in last.</li> <li>Top up with stock until just covering meat. Cook for 4-6 hours, adding dumplings 45 minutes before the end.</li> </ol> <p>For the dumplings:</p> <ol> <li>Mix together suet, flour, baking powder and salt.</li> <li>Add 4-5 tablespoons of cold water and mix until soft and slightly sticky.</li> <li>Roll into balls about size of walnuts.</li> <li>Add to slow cooker about 45 minutes before the end.</li> </ol>

Handy Hint

<p>Use hands to mix dumplings. <br />Don't worry about sealing the meat first.</p>
