Ingredients

  • 3 tbsp caster sugar

  • 1 knob fresh ginger finely grated

  • 1 bunch fresh coriander

  • 3 limes

  • 1 red chilli very finely sliced

  • 0.5 tsp fish sauce

  • 1 salmon fillet

Method

  1. Skin and bone the salmon (if it's a posh fillet it shouldn't have bones and you can ask your fish monger to skin it).
  2. Using a very sharp knife cut it into chunks and put it in a non metallic dish.
  3. Squeeze limes and combine with sugar, salt, ginger and chilli. Pour over the fish and chill for at least an hour.
  4. When ready to serve, sprinkle with fresh coriander.

Handy Hint

Taste the dressing before putting it on the fish - should be a nice balance of salty, sour and sweet. Adjust as necessary.
