Salmon ceviche

  • 3 tbsp caster sugar

  • 1 knob fresh ginger finely grated

  • 1 bunch fresh coriander

  • 3 limes

  • 1 red chilli very finely sliced

  • 0.5 tsp fish sauce

  • 1 salmon fillet


<ol> <li>Skin and bone the salmon (if it's a posh fillet it shouldn't have bones and you can ask your fish monger to skin it).</li> <li>Using a very sharp knife cut it into chunks and put it in a non metallic dish.</li> <li>Squeeze limes and combine with sugar, salt, ginger and chilli. Pour over the fish and chill for at least an hour.</li> <li>When ready to serve, sprinkle with fresh coriander.</li> </ol>

Handy Hint

<p>Taste the dressing before putting it on the fish - should be a nice balance of salty, sour and sweet. Adjust as necessary.</p>
