Ingredients

  • 1 onion, chopped

  • 200ml chicken stock, or enough to cover the spuds

  • 500g minced beef, extra lean

  • 750g potatoes, cut into large chunks

  • 2 carrot, grated

  • 1 handful frozen peas

Method

  1. Soften onion and carrots in a little oil.
  2. Add mince and brown.
  3. Stir in the potato chunks and add enough chicken stock to cover.
  4. Leave to boil for a few minutes then add peas.
  5. Allow to simmer until the potatoes are cooked through.

Handy Hint

A lovely warming tea. This is one of the only ways I can get my son to eat veg and he always asks for more.
