Pumpkin and sweetcorn soup

Ingredients

  • 1 onion, peeled and finely chopped

  • 75ml vegetable stock

  • 1 tin sweetcorn

  • 700g pumpkin, or butternut squash, peeled, de-seeded and chopped into 1 inch dice

  • 275ml whole milk

  • 25g butter

Method

  1. Melt the butter, add the chopped onion and fry gently for about eight minutes.
  2. Add the pumpkin and sweetcorn, season well and give it a stir to coat with the melted butter, then put lid on and let the vegetables sweat for about 10 minutes.
  3. Add the milk and stock and simmer for 20 minutes.
  4. When it's ready, give it a whizz (quite nice to leave a bit of texture) and you have a lovely warming soup.

Handy Hint

You can substitute butternut squash for the pumpkin.
Stir in some red lentils (I use half a cup) when adding milk and stock to make a thicker, more filling soup.
Nice with a swirl of crème fraiche when serving, but not essential.
Leave out the salt and freeze in batches for babies - lovely with a bit of mashed potato or a slice of bread torn in, for them.

    Delicious recipe, really hearty soup. Went down well with with kids and adults. Small typo in the recipe, should be 750ml of stock, not 75ml!

    This is lovely with butternut squash. I quarter it, and roast it until soft (don't remove skin or seeds) and then when soft, discard the seeds and skin and just roughly chop and pop into the pan at the "stock and milk" stage and continue as normal. Lovely.

    Delicious! I love the tip to add lentils too, it makes it more substantial as a lunch!
