Pasta with eggs and cheese

Ingredients

  • 1 handful cheese, preferably Emmental but cheddar will do, grated

  • 1 eggs, per person

  • 2 handfuls pasta, per person

Method

  1. Boil the pasta. Tagliatelle is best or even better, French nouilles.
  2. 3 minutes before the end of cooking time, add the eggs in their shell so that they are softly boiled.
  3. Drain the pasta, put on a plate, break the egg on top and cover with grated cheese.

Handy Hint

That's all it takes for a healthy, nutritious meal in 3 mins!

    Lovely simple french cooking...use best quality eggs and cheese you can find and i added black pepper,a knob of butter and a tablespoon of cream to the pasta too for extra 'protein'...is a different dish to carbonara as the eggs are soft boiled, like they should be in a nicoise instead of stirred in raw and because its not called carbonara....

    YUK - the above recipe is a crime against good simple food. Do it properly instead. Fry some bacon or pancetta (kids like it crispy) - cook your pasta (Spaghetti or Fusilli of course) for a few minutes and when both are ready drain the pasta and put the bacon into the pasta pan. Now crack a couple of eggs into the pan and stir VERY gently for 30 seconds then serve straight away. The heat from the pasta will cook the egg VERY quickly as it glazes the pasta. It's called CARBONARA.

    Is it hygenic to boil eggs in with the pasta you are going to eat given where they come from?
