Mushroom and spinach plait

Ingredients

  • 1 onion, chopped finely

  • 1 pinch nutmeg

  • 500g shortcrust pastry, 1 packet. Preferably made with butter, or make your own

  • 3 tbsp extra virgin rapeseed oil, or olive oil

  • 2 cloves garlic, crushed

  • 250g mushrooms, sliced

  • 100g feta, cut into small cubes, optional

  • 3-4 sprigs thyme, leaves stripped and finely chopped

  • 500g frozen spinach, half thawed

Method

  1. Fry the onion in 1 tbsp oil until softened. Add spinach, nutmeg and salt and pepper to taste and cook for 5 minutes. Cool.
  2. Heat remaining oil and add mushrooms and garlic, fry until softened.
  3. Now you need your pastry in a rectangle about 20 x 30cm (12 x 14 inches).
  4. Mark into three equal sections length ways. Moisten the edges with water. Make diagonal slits along the outer sections, 2.5cm (1 inch) apart and 7.5cm (3 inches) long.
  5. Spread half the spinach mixture, mixed with the feta cubes (if using), over the centre section of the pastry, place the mushrooms on top, then cover with remaining spinach. Fold the cut pastry strips over the spinach, press to seal.
  6. Brush with egg and sprinkle with sesame seeds. Bake in a pre-heated oven 200C for 30-35 minutes.

Handy Hint

Instead of faffing around with all the plaiting, just make it into one big parcel, or, even better, into individual pies for each person.
You can adapt this by adding other vegetables.

    I added goats' cheese on top of the spinach mix which was delicious. The end product was really tasty, even my 1 year old enjoyed it as finger food! However, it took me quite a bit longer than 20 mins to prepare (even using frozen pastry) so allow for that.
