Ingredients

  • 1 vegetable stock cube

  • 2 tbsp butter

  • 280ml milk

  • 1 tbsp flour level

  • 3 spring onion chopped

  • 340g sweetcorn

  • 280ml water

Method

<ol> <li>Heat butter and stir in flour.</li> <li>Stir in water, milk and stock cube and bring to boil.</li> <li>Add sweetcorn and spring onions and simmer for 2-5 minutes until thickened.</li> <li>Blitz quickly with hand blender for a more creamy consistency (if desired).</li> <li>Season to taste and serve.</li> </ol>

Handy Hint

<p>Subtitute chicken stock with vegetable stock for a vegetarian version.</p> <p>Add strips of cooked chicken for a hearty chicken and sweetcorn soup.</p>

    Much better than I expected - I thought it would be kiddie-fodder. I used a small leek instead of the spring onions. Tasted lovely with loads of freshly ground black pepper.

    Absolutely gorgeous! I made it slightly differently with pancetta, potatoes and other veg I had in the fridge on top of the recipes and lovely Will def be making this again!
