Marrow and lentil bake

Ingredients

  • 1 tsp olive oil

  • 1 pint chicken stock

  • 1 tin chopped tomato

  • 1 tsp dried oregano

  • 2 cloves garlic

  • 1 handful brown bread crumbs

  • 1 handful Parmesan, grated

  • 250g unsmoked bacon, lean, one packet

  • 1 marrow, chopped into 1 inch cubes

  • 200g red lentils

Method

  1. Preheat the oven to 180C.
  2. Cut any fat off the bacon and fry with garlic in a little olive oil. Add a generous pinch of dried oregano.
  3. Add the red lentils and chopped marrow and continue to fry off gently for 2/3 minutes.
  4. Add the tomatoes and stock (if too dry add more stock as lentils will absorb a lot).
  5. Simmer on heat for 5 mins then transfer to oven in lasagne type oven proof dish.
  6. Bake for 20 mins then add the breadcrumbs and Parmesan for further 10 mins.
  7. Serve with crusty brown bread and green salad.

    It's a really tasty and such a nutritious meal. Great way of getting children to eat those oh-so-good-for-you-lentils!
