  • 250g block halloumi cheese cubed

  • 1 bowl vegetables eg red onion, mushrooms, peppers, cherry tomatoes or aubergine, cubed

  1. Thread the halloumi and the vegetables onto the kebab skewers.
  2. Once all the kebabs are complete, drizzle the lot with good olive oil and chopped fresh or dried herbs.
  3. Grill on the BBQ or a hot frying pan until ready. The cheese holds its shape and is yummy.

Semi cooked peppers/onions/aubergine can be a bit much for many kids. Perhaps cook a bit first to brown and soften otherwise not very pleasant to eat. Otherwise tomatoes will go to mush and cheese will be horrid before veg are nicely cooked.

If using wooden skewers it is a good idea to soak them in water for an hour before you use them as this stops them catching fire on the barbie
