Salmon fillet with roasted vegetables

  • 300g vegetables chopped (eg onion, pepper, garlic, carrot, tomatoes)

  • 1 sprig fresh rosemary

  • 2 smoked salmon fillets


  1. Chop veg into similar-sized chunks (you can do this in advance - the day before if necessary).
  2. Put into ovenproof dish, spray with Fry Light/toss in olive oil and roast in medium oven (200C) for about 30-40 mins, until veg is lightly roasted and soft.
  3. Put salmon into ovenproof dish. Chuck roasted veg on top and roast at 200C for 25 mins.

Handy Hint

Serve with green salad and sweet potato. YUM!
