1 pinch salt
3 tbsp vegetable oil
115 g plain flour
- Heat the oven to 240C/Gas Mark 9.
- Put 5mm of vegetable oil into the bottom of each hole in a muffin tin and bung in the top shelf of the oven.
- Beat two eggs into the milk and then add half the mixture to the flour/salt. Mix wildly until it's all combined, then add the rest of the liquid. Again, mix wildly until it bubbles. Leave for as long as possible (at least 30 minutes or overnight in the fridge if you can).
- Take the tin out of the oven and pour the mixture into each hole. Cook for about 20 minutes, resisting the temptation to keep opening the door!
Make sure the oil is very hot before you add the mixture, it will be spitting a bit!
