1 chicken breast, (per person)
1 jars mango chutney
1 tins low fat coconut milk
- Line a roasting tin with a couple of layers of foil.
- Throw in a chicken breast or two per person (depending on how hungry you are).
- In a bowl, mix mango chutney and coconut milk.
- Chuck mix over chicken, pop in oven (220C for an electric oven)and cook until chicken cooked through - about 35 minutes - basting occasionally.
Serve with potato wedges and greens - rice and pasta taste really wrong with this!
