  • 1 chicken breast (per person)

  • 1 jar mango chutney

  • 1 tin low fat coconut milk


<ol> <li>Line a roasting tin with a couple of layers of foil.</li> <li>Throw in a chicken breast or two per person (depending on how hungry you are).</li> <li>In a bowl, mix mango chutney and coconut milk.</li> <li>Chuck mix over chicken, pop in oven (220C for an electric oven)and cook until chicken cooked through - about 35 minutes - basting occasionally.</li> </ol>

Handy Hint

<p>Serve with potato wedges and greens - rice and pasta taste really wrong with this!</p>
