  • 25g butter or dripping

  • 1 onion finely chopped

  • 1 tbsp brown sugar

  • 1 tsp salt

  • 120ml vegetable stock

  • 1/2 tsp black pepper

  • 1 red cabbage shredded

  • 1 tbsp white vinegar

  • 2 apples chopped into chunks

  • 1 pinch powdered mace optional


<ol> <li>Melt the butter in a large pan.</li> <li>Add all the other ingredients and stir thoroughly.</li> <li>Put the pan lid on and cook gently, stirring from time to time, until the cabbage is tender but not soggy.</li> </ol>

    Super-simple but failsafe red cabbage recipe. Great with sausages or roasts, and Christmas dinner staple.
