Ingredients

  • 25g butter or dripping

  • 1 onion finely chopped

  • 1 tbsp brown sugar

  • 1 tsp salt

  • 120ml vegetable stock

  • 1/2 tsp black pepper

  • 1 red cabbage shredded

  • 1 tbsp white vinegar

  • 2 apples chopped into chunks

  • 1 pinch powdered mace optional

Method

  1. Melt the butter in a large pan.
  2. Add all the other ingredients and stir thoroughly.
  3. Put the pan lid on and cook gently, stirring from time to time, until the cabbage is tender but not soggy.

    Super-simple but failsafe red cabbage recipe. Great with sausages or roasts, and Christmas dinner staple.
