Porcini pasta sauce

Ingredients

  • 1 splash olive oil

  • 1 tin chopped tomato

  • 1 handful parsley, washed and coarsely chopped

  • 1 small red chilli, finely chopped or 1 tsp chilli from a jar

  • 1 clove garlic, peeled and finely chopped

  • 75g dried pasta

  • 25g dried porcini mushrooms

  • 75ml cream

  • 50g Parmesan, (plus a little extra to sprinkle oveR)

  • 2 tbsp lemon juice

Method

  1. First of all, soak the porcini mushrooms in very hot water for at least 15 minutes or according to packet instructions. Put on a big pan of water to boil for the pasta.
  2. While the mushrooms are soaking, fry the chilli, garlic and parsley with the olive oil in a large frying pan over a medium heat, they will smell fantastic.
  3. Then take the mushrooms from their liquid with a slotted spoon and add to the frying pan, stirring for a few moments. Gradually add the mushroom liquid and turn up the heat.
  4. Continue to stir while the liquid reduces, a few more moments, then add the tomatoes, stir thoroughly, bring to the boil and allow to simmer.
  5. By this time the pasta water should be boiling, allow 75g dried pasta per person. You could make a green salad to go with this while the sauce thickens and the pasta cooks.
  6. After about 10 minutes the sauce should be reduced and the pasta nearly al dente. Add a squeeze of lemon juice and a slosh of cream, stir, drain the pasta and add that too, grate Parmesan enthusiastically and serve in big bowls with more Parmesan to go on top.

This is a recipe that I've adapted slightly from River Cafe 1 and it never fails to delight vegetarian friends as well as being a great weekday standby.
