  • 1/2 onion, peeled and finely chopped

  • 3 tbsp olive oil

  • 1 pint vegetable stock, boiling

  • 1 tin chopped tomato

  • 200g sweetcorn, (from a tin)

  • 1 knob fresh ginger, around 2.5cm, peeled and finely chopped

  • 50g frozen peas

  • 100g couscous

  • 25g raisins


  1. Pour the vegetable stock over the couscous and leave to stand for 5 minutes. Add a knob of butter.
  2. Fry the ginger and onions until starting to turn brown.
  3. Add the chopped tomatoes and the frozen peas and cook until piping hot.
  4. Add the sweetcorn and raisins and continue cooking until piping hot.
  5. Fluff the couscous with a fork, then add the other ingredients. Serve with the tomato sauce poured over.
