  • 1/2 tsp cinnamon

  • 1 tin tomato

  • 1 lemon juiced

  • 1 tsp cumin seeds

  • 1 clove garlic or to taste

  • 200g couscous

  • 1 handful fresh basil chopped

  • 1 red chilli

  • 500g white fish skinless


<ol> <li>Make up the couscous according to the instructions on the packet i.e: cover in boiling water and set aside for duration of cooking fish.</li> <li>Put the chilli, cumin, basil leaves and cinnamon in a big pan with a good glug of olive oil. Leave for 3 minutes.</li> <li>Place the fish on top and then add the tin of tomatoes.</li> <li>Bring to the boil and then reduce the heat and simmer for 8 minutes.</li> <li>Squeeze the lemon in just before serving and add some more basil. Serve with the couscous.</li> </ol>
